We are currently recruiting a Head Chef to join our Food & Beverage team. The Head Chef is responsible for providing food & beverage for all function outlets including tournaments, social events, dining room, concession, and beverage cart.
DUTIES AND RESPONSIBLITLIES:
- Organizing and coordinating all activities that relate to the kitchen and its service
- Menu compilation according to agreed upon food service focus, costed recipes and portion control
- Responsible for control of storing, issuing and transferring food and other inventory items
- Manage monthly inventory and food cost determinations
- Responsible for cleanliness and upkeep of kitchen and storage area
- Supervises and coordinates daily operation of kitchen and kitchen staff
- Responsible for the appearance and cleanliness of the kitchen staff
- Monitors food and labour cost control within the department
- Controlling inventories including rotation of stock, timely month end inventory count, data entry and calculation of food cost percentages reported to F&B
- Hiring of quality personnel, providing ongoing training in culinary skills and kitchen management
- Achieve budgeted targets for labour costs
QUALIFICATIONS:
- College diploma in Culinary Management or related program
- 5 years of experience in a related food environment
- Knowledge of food production, sanitation, food cost controls and presentation
- Proficiency in MS Word and Excel
- Communication skills (facilitation, listening, verbal, written, presentation)
- Well organized and able to work well under pressure
